Chicken and Bell Pepper Quesadilla topcook.tomathouse.com
Ingredients:
- 10 wheat tortillas (25 cm each)
- Butter, for sautéing
- 1 medium wheel of brie cheese
- 1 cup grated Swiss cheese
- 1 cup cheddar
- 2 large sweet onions, sliced into rings and grilled
- 2 - 3 roasted sweet red peppers, cut into strips
- 6 grilled chicken breasts and thinly sliced
- 1 cup sour cream
- 3 tbsp chopped chives
Preparation:
- Heat a 25cm (10-inch) sauté pan over medium heat, melt the butter, and add the tortilla. Sprinkle with any cheeses you like.
- Put out the onion, sweet pepper, chicken, sprinkle with a little more cheese, and top with another tortilla. Cover the pan with a lid and cook the quesadilla for 3-4 minutes, until golden brown. Then flip and cook the other side in the same way.
- Repeat with the remaining tortillas and ingredients. Let the quesadilla cool for 2 minutes before slicing. Cut into slices like a pie. Top with a little sour cream and a sprinkle of chives.
