Slow Cooker American Meatloaf topcook.tomathouse.com
Ingredients:
- 1 kg of minced meat (a mixture of beef, veal and pork)
- 1 cup panko breadcrumbs
- 2 large eggs
- 1 and 1/4 tbsp. ketchup
- 2 tablespoons Worcestershire sauce
- 4 green onions, finely chopped
- 2 tbsp chopped fresh parsley + extra for serving
- 2 tsp chopped fresh thyme
- 350 g small fingerling potatoes, cut in half
- 3 carrots, sliced 2.5 cm thick.
- 1/4 cup lightly salted chicken broth
- 2 tbsp. l. brown sugar
Preparation:
- In a large bowl, combine the ground meat, panko breadcrumbs, eggs, 3/4 cup ketchup, 1 tablespoon Worcestershire sauce, green onions, parsley, thyme, 1 teaspoon salt and a few grinds of pepper; mix with your hands to evenly combine all the ingredients. Form into a 12 x 22 cm loaf.
- Transfer the meatloaf to a 6-quart slow cooker. Arrange the potatoes and carrots on top and around the meatloaf. Pour in the chicken broth. Close the slow cooker and cook the meatloaf on low for 8 hours or high for 4 hours.
- When the meatloaf is done, skim off any excess fat from the slow cooker liquid. In a small bowl, combine the remaining 1/2 cup ketchup, 1 tablespoon Worcestershire sauce, and brown sugar, then stir in 1/4 cup of the slow cooker liquid. Brush the meatloaf with the sauce. Close the slow cooker and let the meat rest for 10 minutes.
- Remove the meatloaf from the slow cooker and cut into pieces. Serve with vegetables and sprinkle with parsley.
