Protein bars

Ingredients:

  • 120 g soy protein powder
  • 65 g of oat bran
  • 75 g whole grain flour
  • 20 g of wheat germ
  • 1/2 tsp salt
  • 85 g of raisins
  • 70 g dried cherries
  • 85 g dried blueberries
  • 70 grams of dried apricots
  • 350 gr. very soft tofu
  • 1/2 cup unfiltered apple juice
  • 110 gr. brown sugar
  • 2 large eggs, beaten
  • 2/3 cup natural peanut butter
  • Vegetable oil for greasing

Preparation:

  1. Line the bottom of a 33 x 22 cm glass baking dish with parchment paper and lightly grease it. Set aside. Preheat oven to 180°C.
  2. In a large bowl, combine the dry soy protein, oat bran, wheat flour, wheat germ, and salt. Set aside.
  3. Chop raisins, dried cherries, blueberries, and dried apricots and place in a small bowl; set aside.
  4. In a third bowl, whisk the tofu until smooth. Add the apple juice, brown sugar, eggs, and peanut butter, one ingredient at a time, whisking constantly. Add this mixture to the egg white mixture and mix well. Stir in the dried fruit.
  5. Spread evenly into the prepared pan and bake for 35 minutes, or until the internal temperature reaches 205°F (96°C). Remove from the oven and let cool completely before slicing. Cut into squares and store the protein bars in an airtight container for up to a week.
