Pizza Pepperoni Chicken Fingers

Ingredients:

    Chicken fingers

  • 90 g sliced ​​pepperoni sausage (about 0.5 cup)
  • 0.5 tsp Italian seasoning
  • 3/4 cup plain breadcrumbs
  • 1 tbsp. l. olive oil
  • 2 large eggs
  • 2 large boneless, skinless chicken breasts, each cut into 8 strips

    Dip sauce

  • 1 tbsp. marinara sauce
  • 1/4 tbsp. grated mozzarella (about 30 gr.)

Preparation:

  1. Preheat the oven to 220°C. In a food processor, puree the pepperoni until finely chopped. Transfer to a shallow bowl and toss with Italian seasoning, breadcrumbs, and olive oil. In a separate shallow bowl, beat the eggs with a pinch of salt.
  2. Prepare chicken fingersPlace a wire rack on a baking sheet; spray with cooking spray. Place the chicken in the egg mixture and toss to coat completely.
