Ingredients:
- 4 cups strawberries, hulled and chopped
- 3/4 cup sugar
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- 1 tbsp rum
- 1 vanilla bean, cut in half and scrape out the seeds
- 1 cup plain Greek yogurt made from whole milk
Preparation:
- 24 hours before cooking frozen yogurt Place only the ice cream maker bowl into the freezer.
- Place the strawberries, sugar, lemon zest, lemon juice, and rum in a bowl and stir. Cover with plastic wrap and let sit at room temperature for 1 hour.
- Place the strawberries and juices in a food processor. Puree the berries, then add the vanilla seeds and yogurt. Continue blending until smooth.
- Place in the refrigerator for 1 hour.
- Turn on the ice cream maker and pour the chilled yogurt mixture into the bowl. Process until the mixture becomes slushy, like soft-serve ice cream, about 12-15 minutes.
- Place in the freezer for a few hours until the ice cream is firm.
