Coconut sauce for ice cream

Ingredients:

  • 1 1/4 cups coconut milk
  • 2 tbsp. l. dark brown sugar
  • 6 mint leaves
  • 1/8 tsp cayenne pepper
  • 1/8 tsp fine salt
  • Ice cream or sorbet
  • Unsalted pistachios, for sprinkling

Preparation:

  1. Combine coconut milk, brown sugar, mint, cayenne pepper and salt in a blender and blend until smooth.
  2. Place ice cream in bowls, drizzle with coconut sauce and sprinkle with chopped pistachios.
