Potato salad with peas

Ingredients:

  • 900 g new potatoes with skin, cut into large cubes
  • 2 tablespoons apple cider vinegar
  • 300 g frozen peas
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1/2 cup chopped chives
  • 1/2 cup dill
  • Salt and freshly ground pepper

Preparation:

  1. Place the potatoes in a large saucepan and cover with cold water to a depth of 2 inches (5 cm). Add salt. Bring to a boil and cook until the potatoes are tender. Using a slotted spoon, transfer the potatoes to a bowl and add the apple cider vinegar.
  2. Boil the peas in the same water until soft. Drain in a colander, rinse under water, and add to the potatoes.
  3. In a separate bowl, combine mayonnaise, sour cream, chives, and dill. Stir in the potatoes and peas, adding salt and pepper to taste.
