Deep-fried zucchini in cheese breading topcook.tomathouse.com
Ingredients:
- 3 medium zucchinis, cut into strips 8cm long and 1cm wide.
- 1 and 3/4 tbsp. grated parmesan
- 1.5 tbsp. panko breadcrumbs
- 3/4 tsp salt
- 2 large eggs
- Olive oil, for frying
Preparation:
- Pour enough olive oil into a large skillet to create a 2-inch (5 cm) layer. Heat over medium heat until a deep-fry thermometer registers 350°F (177°C).
- Combine 1.5 cups Parmesan cheese, breadcrumbs, and salt in a medium bowl. In another bowl, beat the eggs until smooth and dip the zucchini strips a few at a time, coating them completely with the egg, letting any excess drip back into the bowl. Then roll them in the breadcrumb mixture, patting to adhere and coat them completely. Place the zucchini strips on a baking sheet.
- When the oil is hot, fry the zucchini sticks a few at a time until golden brown (about 3 minutes). Using a slotted spoon, transfer the fried zucchini to paper towels to drain excess oil.
Place the fried zucchini on a platter. Sprinkle with the remaining Parmesan cheese and serve.
