How to make tahini

Ingredients:

  • 1 cup sesame seeds
  • 2 tbsp or more olive oil (a blend of refined and unrefined), a neutral oil such as grapeseed and/or a small amount sesame oil
  • Salt (optional)

Preparation:

  1. Toast raw sesame seeds if desired.Toasted sesame seeds will add a nutty flavor to the paste. Heat a dry frying pan on the stovetop and toast the sesame seeds over medium heat, stirring frequently with a wooden spoon. Toast for about 5 minutes, until fragrant and slightly darkened (not brown). Then transfer them to a tray or large platter and let cool completely.
  2. You can also toast the seeds in the oven: Preheat the oven to 350°F (175°C). Spread the sesame seeds evenly on a rimmed baking sheet and toast for 5 minutes, stirring once or twice, until fragrant and slightly darkened (they shouldn't turn brown). Then transfer them to a tray or large platter and let cool completely.
  3. Grind the sesame seedsTransfer the sesame seeds to a food processor fitted with the S-blade. (You can also use a mortar and pestle or a blender, but the results will vary depending on the type of blender.) Process the seeds for 2 to 3 minutes until they form a crumbly paste.
  4. Add oilAdd 2 tablespoons of oil to the food processor bowl. Blend again for 1–2 minutes, scraping down the sides, until a thick, smooth paste forms.

    Add more oil (optional)To make the tahini thinner, add more oil 1–2 tablespoons at a time until you reach your desired consistency.

    Add salt (optional): add salt to taste and stir.
