Kale and Apple Salad

Ingredients:

  • 3 tablespoons lemon juice
  • 2 tbsp. l. olive oil
  • 1 bunch kale, stems removed, leaves thinly sliced
  • 1/4 cup dates
  • 1 Honey Crisp apple
  • 1/4 cup toasted sliced ​​almonds
  • 30 g Pecorino cheese, finely grated

Preparation:

  1. In a large bowl, combine lemon juice, olive oil, and 1/4 teaspoon salt. Add the kale, toss, and let sit for 10 minutes.
  2. Meanwhile, thinly slice the dates and cut the apples into matchstick-sized pieces. Add the dates, apple, almonds, and cheese to the kale. Season with salt and pepper and mix well.
