Gin fizz with plum and basil

Ingredients:

  • 1/3 cup sugar
  • 1 cup fresh basil, plus more for garnish
  • 4 plums, sliced
  • 1 tbsp. gin
  • 3 cups sparkling water, chilled

Preparation:

  1. Make basil syrupCombine sugar and 1/3 cup water in a small saucepan and bring to a boil, stirring to dissolve the sugar. Remove from heat and let cool completely, about 1 hour, then strain.
  2. Muddle 3 plums in a large measuring cup with a wooden spoon. Stir in the basil syrup and gin. Chill until ready to serve. Pour into ice-filled glasses and top with soda water. Top with basil and the remaining sliced ​​plums.
