topcook.tomathouse.com

Ingredients:

  • 600 g of sea scallops
  • 1/4 cup chopped cilantro leaves, plus 2 tbsp.
  • 8 slices of bacon
  • 1 tbsp. l. olive oil
  • 1 ripe papaya, peeled, seeded and diced
  • 1 tbsp lime juice
  • 1 tbsp chopped jalapeño
  • 1/2 tsp ground cumin
  • 1 cup cooked quinoa

Preparation:

  1. Preheat oven to 200 degrees Celsius. Spray a large baking sheet with cooking spray.
  2. Cook 1 cup quinoa according to package directions. Add 1/4 cup chopped cilantro while cooking. Cover and set aside.
  3. Cut the bacon halves crosswise and wrap them with slices of about 1 pound of scallops. Secure with wooden toothpicks if necessary.

Heat the oil in a large ovenproof skillet over medium heat. Add the scallops and sear for 1-2 minutes on each side until golden brown. Place the skillet in the oven and bake for 5 minutes, until the scallops are cooked through (opaque).
  4. While the scallops are cooking, prepare the papaya sauce. In a small bowl, combine the diced papaya, 2 tablespoons of cilantro, lime juice, jalapeño, and cumin. Season with salt and black pepper.
  5. Remove 2 cooked scallops from the pan and refrigerate for another recipe. Serve the remaining scallops with quinoa and papaya sauce.
