Turkey Chili with White Beans topcook.tomathouse.com
Ingredients:
- 1400 g of ground turkey
- 850 g canned cannellini beans with liquid
- 2 fried chili peppers
- 0.25 parts chopped bunch of cilantro
- 0.25 cup olive oil
- 1 large onion, chopped
- 4 finely chopped garlic cloves
- 2 tbsp. salt
- 0.25 cups flour
- 0.25 tbsp. chili powder
- 3 tablespoons cumin
- 0.5 tbsp ground black pepper
- A pinch of cayenne pepper
- 4 cups chicken broth
Preparation:
- In a blender or food processor, puree the roasted chili peppers and cilantro until smooth. Set aside.
- Combine the olive oil, onion, garlic, and salt in a large Dutch oven over medium-high heat. Cook until the onion is translucent, 5-6 minutes. Add the turkey and cook until cooked through, breaking up the meat with a wooden spoon, about 7-8 minutes.
- Add the flour, chili powder, cumin, black pepper, and cayenne pepper and cook until fragrant, about 2 minutes. Add the chicken broth and scrape up any browned bits stuck to the bottom of the pan. Add the prepared chili and cilantro puree. Bring to a boil, then reduce the heat to a simmer.
Add the beans and simmer, partially covered, until the turkey is tender and the chili has thickened, about 1 hour. Remove from heat, cover, and keep warm until serving. Garnish before serving.
