Ingredients:
- 1 can pinto beans
- 4 plum-shaped tomato
- 1 sweet pepper, cut into small cubes
- 1 onion, chopped
- 1/2 cup chopped red onion
- 3 tbsp. l. olive oil
- Juice of 1 orange
- 1/2 tsp cayenne pepper
- 1 teaspoon of salt
- 2 tbsp. boiled rice
- Chopped greens (cilantro, green onions)
Preparation:
- Soak red onion in cold water with ice for 10 minutes. Then drain and pat dry.
Meanwhile, grate the tomatoes and place them in a salad bowl. Add olive oil, orange juice, cayenne pepper, bell pepper, onion, pinto beans, and a teaspoon of salt.
Stir in rice and herbs. Season with salt and pepper.
