Plum tart with cream cheese topcook.tomathouse.com
Ingredients:
- 12 fresh plums
- 1 tbsp. brandy
- 450 gr. fresh Fromage Blanc curd cheese
- 1 cup of sugar
- 2 egg yolks
- 1/4 cup heavy cream
- 2 tablespoons of wheat flour
- 1 tbsp fresh lemon juice
- 1 tsp natural vanilla extract
- 1 unbaked pie crust (25cm diameter)
- 1 cup sweet whipped cream
- 8 sprigs of fresh mint
Preparation:
- Cut the plums in half. Place them in a shallow dish and pour the brandy over them. Cover with plastic wrap and refrigerate for 2 hours.
- Preheat oven to 180°C.
Place the cheese in a food processor with the blade attachment. Blend until smooth. Add the sugar and blend until completely combined. With the processor running, add the eggs one at a time. Add the cream, flour, lemon juice, and vanilla extract. Blend until smooth.
- Place the plum halves in the pie crust. Pour the cheese mixture over the plums and smooth it out. Place on the bottom rack of the oven. Bake until the tart is cooked through, about 40 minutes.
If the top begins to burn, place a piece of aluminum foil on top. Remove from the oven and let cool completely. Cut into 8 pieces and garnish with whipped cream and mint.
