Mojito-flavored sweet potato puree

Ingredients:

  • 2 peeled and sliced ​​tubers sweet potatoes
  • Salt
  • 2 tbsp (30 g) butter
  • 2 tablespoons of sugar
  • 2 shots of rum (45 ml each)
  • Juice of 2 limes
  • A handful of chopped mint leaves
  • Almond petals

Preparation:

  1. Place the potatoes in a small saucepan and cover with water. Bring the water to a boil and add salt. Cook the potatoes until tender, about 15 minutes. Drain the potatoes, return them to the hot saucepan, and mash with butter, sugar, rum, lime, and sprinkle with mint and almonds. Season the mashed potatoes with salt to taste.
