Peanut Butter Cookies with Jam

Ingredients:

  • 1 egg
  • 3/4 cup sugar
  • 1 tbsp. peanut butter
  • 1 tsp vanilla extract
  • 4 tsp grape jam

Preparation:

  1. Preheat oven to 175°C.
  2. In a medium bowl, beat the egg and sugar until smooth. Add the peanut butter and vanilla extract and mix until smooth. By this point, the batter will have thickened.
  3. Drop the dough, 1 tablespoon at a time, onto a parchment-lined baking sheet. Spray a small offset spatula with cooking spray and press the balls into a 1/2-inch thick layer; make a well in the center. Add 1/4 teaspoon of grape jam to each well and spread it into a thin layer.
  4. Bake until golden brown, 15–18 minutes. Let the cookies cool.
