Waldorf salad with turkey

Ingredients:

  • 2 cups diced ready-made turkey meat
  • 2 stalks celery, sliced
  • 1/2 cup coarsely chopped celery leaves, plus extra for garnish
  • 1 red sweet apple, cored and diced
  • 1 cup black grapes, seedless (sultanas), halved
  • 1/2 cup pecans, toasted and coarsely chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 teaspoon of honey
  • 1/4 teaspoon salt
  • 1 celery root, peel, cut into strips
  • Freshly ground black pepper

Preparation:

  1. In a large bowl, combine the turkey, celery, celery leaves, apple, grapes, and pecans. In a small bowl, combine the yogurt, mayonnaise, honey, and salt. Place the celery root in the small bowl, add 2 tablespoons of the dressing, and toss to combine. Add the remaining dressing to the salad, season with pepper, and toss to combine.
  2. Place the celery root on serving plates, place the salad on top and garnish with celery leaves.
