Ingredients:
- 2 cups diced ready-made turkey meat
- 2 stalks celery, sliced
- 1/2 cup coarsely chopped celery leaves, plus extra for garnish
- 1 red sweet apple, cored and diced
- 1 cup black grapes, seedless (sultanas), halved
- 1/2 cup pecans, toasted and coarsely chopped
- 1/2 cup Greek yogurt
- 2 tablespoons mayonnaise
- 1 teaspoon of honey
- 1/4 teaspoon salt
- 1 celery root, peel, cut into strips
- Freshly ground black pepper
Preparation:
- In a large bowl, combine the turkey, celery, celery leaves, apple, grapes, and pecans. In a small bowl, combine the yogurt, mayonnaise, honey, and salt. Place the celery root in the small bowl, add 2 tablespoons of the dressing, and toss to combine. Add the remaining dressing to the salad, season with pepper, and toss to combine.
- Place the celery root on serving plates, place the salad on top and garnish with celery leaves.
