Ingredients:
- 2 cups of flour
- 5 tsp baking powder
- 2 and 1/4 teaspoons sugar
- 130g unsalted butter, cut into small pieces and frozen
- 3/4 cup sour milk or kefir
- 4 cups lightly salted chicken broth
- 2 cups of ready-made mashed potatoes with gravy
- 3 cups chopped fried chicken
- 1 package (280 g) frozen green peas with carrots, thawed
- Flour for work
Preparation:
- Preheat oven to 230°C.
- Combine the flour, baking powder, sugar, and 1 tablespoon of salt in a food processor. Add the butter and pulse until the mixture is pea-sized. Add the buttermilk and pulse a couple of times until the dough comes together. Transfer to a bowl, cover, and refrigerate while you prepare the sauce.
- In a large cast-iron skillet, combine the chicken broth and mashed potatoes and bring to a boil over medium-high heat. Add the fried chicken, green peas, and carrots.
- Spread 1 tablespoon of dough evenly over the top. Transfer the pan to the oven and bake until the topping is golden brown, 40-45 minutes. Let rest for 10 minutes and serve.
