Ingredients:
- 6 boneless, skinless chicken breasts
- Cooking spray or vegetable oil
- 1 tbsp. salt
- 0.5 tbsp. l. ground cumin
- 1 tbsp lemon pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder or flakes
- 1 tbsp. l. dried oregano
- 1 tbsp. l. dried parsley
- 1 tbsp ground annatto seeds
(Annatto seeds are extracted from the fruits of the Brazilian annatto tree and are used to color oils, sausages, cheeses, and creams red-orange in the cuisine of the Caribbean, Brazil, Latin America, and Filipino cuisine)
Preparation:
- Combine all seasoning ingredients in a small glass jar with a lid and shake to combine. Store in a cool, dry place for up to 2 weeks.
- Rub the chicken with adobo seasoning. Heat a grill pan over medium heat and spray with cooking spray or vegetable oil. Place the chicken in the grill pan and cook for 3-5 minutes per side, depending on the size of the chicken breasts.
