Ingredients:
- 2 x 400g cans of white beans with liquid
- 450 g Polish sausage, cut into 1 cm thick circles.
- 1 tbsp. vegetable oil
- 1 medium onion, diced (about 1 cup)
- 1/3 cup tomato paste
- 2 tablespoons dark brown sugar
- 2 tablespoons balsamic vinegar
- 1 tablespoon chopped chipotle peppers in adobo sauce
- 2 hot dog buns, cut into 1cm cubes.
- 2 tablespoons unsalted butter, melted
- 1/4 cup pickled cucumber relish
Preparation:
- Preheat oven to grill mode and position the rack 5 cm from the heating element.
- Heat vegetable oil in a large skillet over medium-high heat. Add half of the sausage pieces, cut-side down, and cook until browned, about 2 minutes. Flip and cook for another minute. Transfer to a paper towel-lined plate. Cook the remaining sausage. Transfer to a plate. Reduce the heat to medium, add the onion, and cook, stirring, until softened and lightly browned, about 5 minutes.
- Add tomato paste, brown sugar, vinegar, and chipotle peppers to the onions. Place half a can of beans (including liquid) in the skillet and mash with a fork until smooth. Then add the remaining beans (including liquid), the cooked sausage, 1/2 cup water, 1 teaspoon salt, and a pinch of freshly ground black pepper. Simmer until the sauce thickens, about 20 minutes.
- Toss the bread cubes with melted butter on a baking sheet and sprinkle with salt and black pepper. Grill in the oven, turning occasionally, for about 2 minutes.
- Divide the sausage and beans among four plates. Spread the croutons and relish evenly on top.
