Thick strawberry jam

Ingredients:

  • 2 tbsp. sugar
  • Zest and juice of a large lemon
  • 3 cups fresh strawberries, hulled and halved

Preparation:

  1. Combine the sugar, lemon zest, and lemon juice in a small saucepan and simmer over very low heat for 10 minutes, until the sugar dissolves. Add the strawberries and continue to simmer over very low heat for 20 minutes, until the strawberries have released some of their juices and the mixture comes to a gentle simmer.
  2. Cook until the juice thickens. Drop a drop onto a cold plate, and it should turn into a gel (freeze the plate first). Carefully pour the jam into half-liter jars and either preserve them or store in the refrigerator. Use the jam immediately or preserve according to the instructions below.
