Ingredients:
Cookie
- 3 tbsp. sugar
- 1 cup of butter
- 4 eggs
- 0.5 cups vegetable oil
- 1 tbsp vanilla extract
- 6 cups premium flour
- 2 tbsp. cocoa powder
- 1 teaspoon baking powder
- 1.5 tbsp. soda
- 1 teaspoon of salt
- 3 cups of milk
Filling
- 1.5 cups of confectionery fat
- 3 cups powdered sugar
- 1 and 1/3 tbsp. marshmallow cream topping
- A pinch of salt
- 1 tsp vanilla extract
- 1/3 - 0.5 cup milk
Preparation:
- Preheat oven to 175°C (or 157°C fan).
- In a large bowl of a stand mixer, beat the sugar with the butter and eggs until smooth. Add the vegetable oil and vanilla and beat again.
- In a separate bowl, combine all dry ingredients. Add half the dry mixture to the butter mixture and whisk or stir. Add 1.5 cups of milk and stir again. Add the remaining dry mixture and whisk until smooth. Add the remaining 1.5 cups of milk and knead into a smooth dough.
- Using a large spoon, drop 32 circles of dough onto a baking sheet. Bake for 10-12 minutes. Cool.
- Spoon the filling into 16 circles and top with the remaining circles to make 16 cakes.
Filling:
In a mixer bowl, combine all ingredients except milk and beat well. Add just enough milk to achieve a creamy consistency. Spread the filling on the cooled cookies.
