Pan-fried BBQ chicken pizza topcook.tomathouse.com
Ingredients:
Pizza
- 1 grilled chicken
- 1 red onion
- 3-4 cloves of garlic
- 0.5 cup chicken broth
- 1 cup ketchup
- 1/4 cup light brown sugar
- 1/4 cup molasses
- 1/4 cup apple cider vinegar
- 1/4 cup Worcestershire sauce
- 1 tbsp smoked sweet paprika
- 1 tbsp. ground mustard seeds
- 450 gr. dough, see recipe below
- Premium flour for work
- About 1 tbsp corn flour
- A pinch of crushed red pepper flakes
- 1 tbsp. grated mozzarella and grated yellow cheddar
- About 2 tablespoons of acacia honey
- 2 tablespoons hot sauce, preferably Frank's Red Hot or Tabasco chipotle
- Coriander leaves
- Green onions, chopped
- Sliced jalapeno peppers
- Garlic Fries, for serving, see recipe below
Pizza dough
- 1 cup of warm water
- 1 packet of active dry yeast
- 2 tbsp extra virgin olive oil + extra for greasing the bowl
- 1 tbsp. acacia honey
- 2 teaspoons coarse salt
- 3 cups premium flour
Garlic French Fries
- 1 bag frozen steak fries
- 3 tbsp melted butter
- 1/4 tbsp. grated parmesan
- 1 teaspoon granulated garlic
- 1 teaspoon dried parsley
- 1 tsp oregano
- 0.5 tsp ground pepperoncini pepper or crushed red pepper flakes
Preparation:
- Preheat oven to 270°C-275°C (high), with a rack in the middle. Heat a 12-inch cast-iron skillet over medium-high heat (for a crispier pizza crust).
- Prepare all the ingredients.
Remove the skin from the chicken, remove the bones, and cut the meat into bite-sized pieces. Dice the onion, and grate or press the garlic.
Heat a second cast iron (or other) skillet over medium heat. Add olive oil for 2 turns of the pan, then add the onion and garlic, season with salt and pepper, and cook for a few minutes until softened. Add the broth and let it absorb. Add the ketchup, sugar, molasses, vinegar, Worcestershire sauce, paprika, and mustard. Add the chicken to the sauce, stir, and remove from the heat.
- Roll and stretch the dough on a lightly floured work surface into an even circle 12-14 inches in diameter, covering the pan. Turn off the heat under the first pan, sprinkle a little cornmeal into the pan, and spoon the dough on top, pressing it up the sides of the pan as high as possible. Be sure the pan is hot. Brush the dough with olive oil and sprinkle with a little salt and black pepper or red pepper flakes. Top the dough with the chicken and sauce and sprinkle with cheese. Place in the oven. Bake for 10-12 minutes, or until golden brown.
- Combine honey, a little water, and hot sauce in a small saucepan or skillet and heat over low heat.
Drizzle or brush the pizza with the honey mixture and sprinkle with green onions, cilantro, and jalapeños.
- Pizza dough.
Pour warm water into the bowl of a mixer fitted with a dough hook, add the yeast and let it dissolve and foam for 5 minutes.
Add olive oil, honey, and salt and turn on the mixer. Gradually add flour to form a dough. Transfer the dough to a bowl lightly greased with olive oil and cover; let rest for 1 hour.
Cut the dough in half, wrap half of the dough in plastic wrap and freeze for later use.
- Preheat oven to 270°C - 275°C.
- Garlic French Fries.
Place the fries on a baking sheet and bake for 15-20 minutes until very crispy.
Transfer the fries to a large bowl. Drizzle with butter and add the remaining ingredients. Toss to coat. Serve hot.
Note
Of course, you won't be able to make the dough in 30 minutes, but this recipe makes enough dough for 2 pizzas, so you can always keep it on hand in the freezer.
