Butterbeer

Ingredients:

  • 1 cup brown sugar
  • 1 cup cold heavy cream
  • 1 tbsp powdered sugar
  • 3 tablespoons caramel sauce
  • A pinch of salt
  • 0.5 tsp butter extract (flavoring)
  • 1/4 tsp vanilla extract
  • 6 cups cold sparkling water

Preparation:

  1. Combine brown sugar and 1/2 cup water in a small saucepan and heat over medium heat. Cook, stirring occasionally, until the mixture comes to a boil and the sugar dissolves, 2-3 minutes. Transfer to a small bowl or liquid measuring cup and refrigerate for about 1 hour.
  2. In a large bowl, beat the cream and sugar with a mixer on medium speed until soft peaks form. Stir in caramel sauce, add salt and beat until medium peaks form. Cover and refrigerate.
  3. Stir the butter and vanilla extracts into the cold sugar syrup. For each serving, combine 1 cup of sparkling water with 3-4 tablespoons of sugar syrup in a chilled glass. Top with caramel whipped cream.
