- 3 tbsp. l. olive oil
- 1 tsp ground cumin
- 0.5 cup chopped pickled picante peppers
- Half a small red onion, chopped
- 1/4 cup finely chopped sweet pickles
- 1/4 cup chopped parsley
- 1 red jalapeño pepper, seeded and finely chopped
- 0.5 tsp sugar
- Special equipment: 8-10 wooden skewers, soaked in water for about 20 minutes
Preparation:
- Soak 8-10 wooden skewers in water for 20 minutes.

- Combine ketchup, mustard, and hot sauce in a bowl. Serve with the sausages for dipping.
- Serve the sausages with tart corn relish.
Tart Corn Relish: Preheat the grill to medium-high heat. Brush the corn with 1 tablespoon of olive oil, sprinkle with cumin, and season with salt and pepper to taste. Grill until golden brown and charred on all sides, 5-8 minutes, turning the corn as needed.
- In a large bowl, combine the remaining 2 tablespoons of olive oil, picante pepper, onion, pickles, parsley, jalapeño, and sugar. Season with salt and pepper to taste. Cut the corn kernels from the cobs and mix them with the relish. Cover and refrigerate for at least 30 minutes.
