Ingredients:
- 1 and 1/4 cups flour
- 1 teaspoon baking powder
- 0.5 tsp fine salt
- 1/4 teaspoon of baking soda
- 1/4 tsp ground cloves
- 110 g butter
- 180 g dark chocolate, finely chopped
- 2 large eggs
- 1 egg yolk
- 1 cup brown sugar
- 2 tsp vanilla extract
- 180 g dark chocolate granules
- 180 gr. white chocolate granules
Preparation:
- In a medium bowl, whisk together the flour, baking powder, salt, baking soda, and cloves. Melt the butter in a saucepan over medium heat. Remove the pan from the heat, add the dark chocolate, and set aside to melt.
- In a medium bowl, whisk together the eggs, brown sugar, and vanilla, then slowly whisk in the chocolate. Stir in the flour mixture until a loose dough forms. Do not overmix. Stir in the chocolate chips. Cover with plastic wrap and refrigerate for 2 hours.
- Preheat oven to 175°C (or 160°C if using a convection oven).
- Line a baking sheet with parchment paper. Form the dough into balls approximately 5 cm in diameter or 45 g each, and place them on the prepared baking sheets, spacing them about 5 cm apart. Bake until the cookies are puffed on the surface but still moist in the center, 13-15 minutes, or 12 minutes fan-assisted. Cool on a wire rack.
