Ingredients:
- 2.3 kg potatoes, peeled and washed
- 165g salted butter, plus extra for sprinkling
- 230 g cream cheese, softened
- 1/4 cup or approximately the same amount of cream with 12.5% fat content
- A small amount of heavy cream
- 3-5 heads of baked garlic
Preparation:
- Preheat oven to 350°F (177°C).
- Dice the potatoes and simmer in a saucepan of water until tender when pierced with a fork (25-30 minutes). Drain and return the vegetables to a low heat. Mash the potatoes for 5 minutes to release most of the steam.
- Add the butter, cream cheese, 12.5% cream, heavy cream, a pinch of salt, pepper, and roasted garlic. Stir to combine. Taste and adjust seasonings if needed.
- Spread the potatoes in a large, buttered baking dish. Sprinkle with pats of butter. Bake until heated through, about 30 minutes. The potatoes can be prepared in advance and stored covered in the refrigerator for about 1 day, then baked just before serving..
