Ingredients:
- 110 g melted butter + extra for greasing the pan
- 1 and 1/4 cups premium flour + extra for dusting the pan
- 0.5 tsp baking powder
- 0.5 tsp of soda
- 0.5 tsp coarse salt
- 0.5 tsp ground cinnamon
- 1/4 tsp ground allspice
- 1/4 tsp ground ginger
- 0.5 cup granulated sugar
- 0.5 cup brown sugar
- 0.5 cups crushed bananas (about 2 bananas)
- 1/4 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 2 bars of vanilla ice cream in chocolate glaze
- Powdered sugar for sprinkling
- Special equipment: ramekin or 2-liter soufflé dish.
Preparation:
- Preheat oven to 350°F (175°C). Grease and lightly flour a 2-quart (2-liter) loaf pan, shaking out any excess. Place the loaf pan on a baking sheet.
- In a large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, allspice, and ginger. In a separate large bowl, beat the butter, granulated sugar, brown sugar, banana, sour cream, eggs, and vanilla until smooth. Then fold the flour mixture into the banana mixture.
- Pour 2.5 cups of batter into the pan and stack the ice cream bars in the center. Pour the remaining batter around the sides and on top of the ice cream.
- Bake until the cake is set and still jiggly in the center, about 45 minutes. Cool in the pan for 15 minutes. Dust with powdered sugar, spoon into serving bowls, and serve.
