Apple popsicles

Ingredients:

  • 2 cups of apple juice with pulp
  • 1/4 cup brown sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 1/8 tsp salt
  • 3 allspice peas
  • 1 cinnamon stick, broken in half
  • 1 cm ginger root, peeled and chopped
  • Special equipment: 6 (1/3 cup capacity) ice cream molds

Preparation:

  1. In a medium saucepan, combine the apple juice, sugar, lemon juice, salt, ginger, cinnamon stick, and allspice and bring to a boil over medium heat. Remove from the heat and let simmer for 15 minutes. Then strain the mixture into a measuring cup.
  2. Pour the mixture into popsicle molds, insert sticks, cover the top and freeze for 6 hours.
  3. Run the molds under cold running water to release the fruit ice and serve immediately.
