Fruit ice with blueberries, thyme and condensed milk

Ingredients:

  • 2.5 cups frozen blueberries
  • 1/2 cup condensed milk
  • 2 tablespoons of sugar
  • 4 tbsp fresh thyme leaves, chopped
  • 2 tablespoons fresh lemon juice
  • Special equipment: 4 x 120ml or 6 x 90ml ice lolly molds; 4 or 6 ice lolly sticks

Preparation:

  1. Remove the blueberries from the freezer to thaw. In a small saucepan, bring the condensed milk, 1/4 cup water, sugar, and thyme to a simmer with a pinch of salt. Cook over medium heat, stirring occasionally, for 5 minutes. Let cool completely at room temperature (at least 30 minutes).
  2. Place 2 cups of blueberries and lemon juice in a blender. Strain the cooled mixture with condensed milk into it. Press with a wooden spoon to extract as much flavor as possible from the thyme, then discard.

    Puree the blueberry mixture until completely smooth, scraping down the sides of the blender occasionally as needed. Transfer the mixture to a large measuring cup with a spout. Stir in the remaining 1/2 cup blueberries.
  3. Pour the mixture into popsicle molds, leaving 0.6 cm of headspace at the top (the mixture will expand). Insert popsicle sticks. Freeze until solid (at least 5 hours or overnight). Remove from the molds and enjoy immediately.
