Ingredients:
- 1 chicken (weight about 1.5 kg)
- 550 g raw chicken sausage
- 450 g smoked pork sausage, thinly sliced
- 350 g skinless and boneless chicken breasts, cut into pieces
- 550 g smoked turkey, skin and bones removed, cut into pieces
- 2 tbsp. plus 2 tbsp. vegetable oil
- 2 cups of wheat flour
- 1 large onion, chopped
- 2 large green bell peppers, chopped
- 2 tsp red pepper flakes
- 1 bunch green onions, chopped
- 1/4 cup Cajun seasoning
- Cooked white rice for serving
Preparation:
- Roasting flourHeat 2 cups vegetable oil in a large Dutch oven over medium-high heat for about 5 minutes. Reduce heat to medium, then add flour in 2 additions, stirring until the mixture reaches the consistency of cake batter. Continue cooking, stirring constantly, until the mixture turns dark brown, about 20 minutes. Remove from heat, then stir in half the onion and pepper.
- In a large saucepan, combine the chicken, 10 cups of water, red pepper flakes, 1 tablespoon of salt, and 1 teaspoon of pepper. Bring to a boil and simmer for 1 hour. Strain the broth, then return it to the saucepan. Remove the skin and bones from the chicken, then cut the meat into medium-sized pieces.
Heat the remaining 2 tablespoons of vegetable oil in a medium skillet over medium heat. Add the chicken sausage and cook, turning, until cooked through, 6-8 minutes. Let cool slightly, then cut into pieces.
- Add 1/6 cup water to the pan with the broth and bring to a boil. Add the flour mixture; cook over medium-high heat, stirring, until dissolved, about 5 minutes. Add the remaining onion and green pepper. Bring to a boil, then reduce the heat to medium, cover, and simmer for 1 hour.
Add the pork sausage and raw chicken breasts, reduce heat to low, and simmer, covered, for another 30 minutes. Add the smoked turkey, chopped chicken sausage, cooked chicken pieces, and leeks and simmer for another 30 minutes. Skim off any fat from the surface, then season with Cajun seasoning. Serve the gumbo over rice.
