Italian Nachos, Guy Fieri Style

Preparation:

Italian salsa: In a bowl, combine 8 seeded and diced pickled peppadew peppers, 2 tbsp juice from a can, 4 seeded and diced ladyfingers tomatoes, 1/3 cup chopped red onion, 1/4 cup finely chopped parsley, and 1 tablespoon each finely chopped and whole capers. Add 1 tablespoon each minced garlic and olive oil, 1 teaspoon pepper, and a pinch of salt; stir. Set aside.

Ground beef and turkey: In a skillet, heat 1/2 tbsp olive oil over medium heat. Add 200 g each ground beef and ground turkey sausage (removed from the casing) and cook, breaking the meat into small pieces, until cooked through and no longer pink; transfer to a plate. Add another 1/2 tbsp olive oil and 1/4 of the diced onion to the skillet; cook for 4-5 minutes, until translucent. Add 1 teaspoon of crushed garlic; stir for another 2 minutes. Add the browned ground beef to the skillet and mix thoroughly; remove from heat.

Wonton chips: Heat 2 inches of vegetable oil in a large skillet over medium heat to 350°F (175°C). Take a package of wonton dough and cut each piece in half diagonally. Drop the dough into the skillet, fry for 30 seconds until bubbly, then flip and fry for another 30 seconds until golden brown. Drain the cooked wontons on a paper towel and season with salt.

Assemble nachos with Italian salsa, ground beef, and wonton chips.

Place half the wonton chips on a large ovenproof dish. Top with half the cooked meat and 1 cup shredded mozzarella; then top with another layer of chips, meat, and mozzarella. Preheat the dish in the oven, about 8-10 inches from the heat source, for 2-3 minutes, or until the cheese begins to melt. Remove the dish from the oven and top with 2 ounces of julienned salami, 1 tablespoon each of julienned basil, finely chopped parsley, and Italian salsa.

Combine 1/4 cup each sour cream and ricotta cheese in a blender; transfer the mixture to a resealable plastic bag and snip off the corner. Pour the sour cream and ricotta mixture over the nachos and sprinkle with finely chopped green onions.
