Chicken salad with macaroni and feta cheese

Ingredients:

  • 340 g of ditalini pasta or other small pasta
  • 2 cups diced cooked chicken (about 450 g)
  • 1/2 cup chicken broth
  • 1 tbsp. l. olive oil
  • 1 tbsp red wine vinegar
  • 2 crushed cloves of garlic
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and ground black pepper
  • 1 red bell pepper, seeded and diced
  • 1/4 cup chopped fresh mint leaves
  • 1/2 cup diced feta cheese

Preparation:

  1. Cook pasta according to package directions.

    In a small bowl, combine broth, oil, vinegar, Dijon mustard, thyme, salt, and pepper to taste. Add diced chicken, green pepper, and mint.
  2. Drain the pasta and place it in a bowl with the dressing and chicken. Toss to combine. Cover with plastic wrap and refrigerate until serving. Sprinkle with feta cheese just before serving.
