Chicken salad with macaroni and feta cheese topcook.tomathouse.com
Ingredients:
- 340 g of ditalini pasta or other small pasta
- 2 cups diced cooked chicken (about 450 g)
- 1/2 cup chicken broth
- 1 tbsp. l. olive oil
- 1 tbsp red wine vinegar
- 2 crushed cloves of garlic
- 1 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and ground black pepper
- 1 red bell pepper, seeded and diced
- 1/4 cup chopped fresh mint leaves
- 1/2 cup diced feta cheese
Preparation:
- Cook pasta according to package directions.
In a small bowl, combine broth, oil, vinegar, Dijon mustard, thyme, salt, and pepper to taste. Add diced chicken, green pepper, and mint.
- Drain the pasta and place it in a bowl with the dressing and chicken. Toss to combine. Cover with plastic wrap and refrigerate until serving. Sprinkle with feta cheese just before serving.
