Spinach and Feta Cheese Puffs

Ingredients:

  • 1 pack (280 g) frozen spinach
  • 110 g coarsely crumbled hard feta cheese
  • About 20 grains of black pepper
  • A little nutmeg
  • Wheat flour for working with dough
  • 1 piece (25x24 cm) of ready-made puff pastry
  • 2 crushed cloves of garlic

Preparation:

  1. Preheat oven to 190°C.

    Defrost frozen spinach in the microwave according to package directions or under warm running water. Drain and squeeze out excess liquid. In a bowl, combine the spinach, feta cheese, garlic, pepper, and nutmeg.
  2. Dust a clean, dry work surface with flour. Place a piece of puff pastry on it. Dust the dough with flour. Roll it out to half its thickness (approximately 0.3 cm) and a size of 60 x 30 cm.

    Trim the edges to the desired size if necessary. Cut the dough into 8 cm wide strips lengthwise and crosswise to make 32 squares (8 x 8 cm). Make sure the squares are well floured and stack them on top of each other.
  3. Pour some room-temperature water into a small dish. Mentally divide each square of dough in half diagonally.

    Place a couple of teaspoons of filling on the top half. Dip your finger in water and moisten the edges of the top half. Fold the dough toward the center, bringing the ends together. Press them with a fork.

    Place the finished corners on a nonstick baking sheet and bake for about 15 minutes, until puffed and golden brown. Serve warm.
