Ingredients:
Cupcake:
- 1 and 2/3 cups premium wheat flour
- 1/2 teaspoon baking soda
- 1/2 cup cocoa
- 1 and 1/3 cups sugar
- 165 g softened butter
- 2 eggs
- 1 tbsp vanilla extract
- 1/3 cup sour cream
- 1/2 cup boiling water
- 1 cup semi-sweet chocolate chips or pieces
Syrup:
- 1 teaspoon cocoa
- 1/2 cup water
- 1/2 cup sugar
- 30g dark chocolate, chopped into shavings of varying thickness (from a thick bar, if possible) for decoration
- Additional equipment: A 900g loaf pan (approximately 25x12x8 cm) lined with greased foil, pressing it into the corners with the ends hanging over the pan. A silicone loaf pan can be used instead (then you don't need to line it).
Preparation:
- Remove all necessary ingredients from the refrigerator to allow them to warm to room temperature.
Preheat oven to 160°C and place a baking tray in it.
Place flour, baking soda, cocoa, sugar, butter, eggs, vanilla, and sour cream in a food processor and process until smooth and silky brown.
Scrape the dough from the edges of the bowl with a silicone spatula and beat again, pouring boiling water through the hole in the lid. Turn off the food processor, remove the lid, and discard the dough. Using a silicone spatula, fold in the chocolate chips or pieces.
Scrape the batter from the sides and pour it into the prepared pans. Place the pans in the oven and bake for about an hour. When the cupcakes are done, they will rise, a crack will form in the center, and a tester will come out clean.
- Shortly before the end of baking (about 45-50 minutes), place the syrup ingredients: cocoa, water, and sugar, in a small saucepan. Cook for about 5 minutes until a thick syrup forms.
Remove the cake from the oven and place it on a wire rack in the pan. Prick it in several places with a cake tester. Drizzle the cake with syrup.
Let the cake cool completely and remove it from the pan, removing the foil. Place it on an oval plate or any other suitable dish. Sprinkle the sticky surface of the cake with chocolate shavings.
