Champ – Irish mashed potatoes with green onions

Ingredients:

  • 6-8 tubers of unpeeled "old" potatoes
  • 1 bunch green onions (use stems and bulbs)
  • 350 ml. (1.5 tbsp.) milk
  • 55-110 g butter
  • Salt and ground black pepper

Preparation:

  1. Wash the potatoes with a brush and boil them in their skins. Finely chop the green onions. Pour cold milk over them and slowly bring to a boil.

    Simmer for 3-4 minutes, reduce heat, and let steep. Peel and mash the freshly boiled potatoes while still hot, and mix with the hot milk and onion. Stir in the butter. Season with salt and pepper to taste. Serve in 1 large bowl or 6 individual bowls with a knob of butter in the center.

    The puree can be stored and later reheated in the oven at 180°C. Cover with foil while reheating to prevent a skin from forming.
