Chicken Alfredo Pizza

Ingredients:

  • 1 boneless, skinless chicken breast (340 g)
  • 1 serving (450 g) of store-bought pizza dough
  • 1 cup heavy cream
  • 1/4 tbsp. grated parmesan cheese
  • 1 tbsp. grated mozzarella cheese
  • 2 cups well washed and dried young spinach shoots
  • 1 cup red and yellow grape tomatoes
  • Salt and ground black pepper
  • 2 tbsp (30 g) butter
  • 1 crushed clove of garlic
  • 1 teaspoon red pepper flakes
  • 1 tbsp. wheat flour, plus a little more for working with the dough
  • Olive oil for greasing the base

Preparation:

  1. Preheat the oven to 190°C (375°F). Position the oven racks in the center. While you prepare the sauce, place the pizza stone in the oven to preheat.

    Heat a grill pan over medium heat.

    Season the chicken with salt and pepper to taste. Place the chicken in the pan and cook until cooked through. Transfer to a cutting board and cut into cubes.
  2. In a medium saucepan, melt the butter over medium heat. Add the garlic and red pepper flakes and cook until fragrant. Add the flour and cook until light beige.

    Add the cream, reduce heat to low, and simmer until thickened, about 2 minutes. Stir in the Parmesan cheese and season lightly with salt and pepper to taste.
  3. Flour your work surface and roll out the dough to a 33cm diameter. Carefully remove the pizza stone from the oven and place the dough on it.

    Spread the sauce over the crust. Evenly distribute the spinach, grape tomatoes, fried chicken, and mozzarella. Brush the edges of the dough with olive oil and season with salt and pepper to taste.

    Bake the pizza until the crust is crisp and golden, about 25 minutes. Remove from the oven and immediately top with a handful of spinach. Slice and serve.
