Unsweetened cookies with kefir

Ingredients:

  • 2 cups of wheat flour
  • 4 tsp baking powder
  • 0.25 tsp baking soda
  • 0.75 tsp salt
  • 2 tbsp (30 g) butter
  • 2 tablespoons of margarine
  • 1 cup chilled kefir

Preparation:

  1. Preheat oven to 230C.
  2. In a large bowl, combine the flour, baking powder, baking soda, and salt. Using your fingers, knead the butter and margarine into the dry mixture until crumbs form. (The faster you knead, the better—the butter shouldn't melt.) Make a well in the center of the crumbs and add the chilled kefir. Mix until smooth. The dough will be very sticky.
  3. Place the dough on a floured surface and dust the top with flour. Gently fold the dough in half 5-6 times. Then roll the dough into a 2.5 cm thick circle. Cut out cookies with a 5 cm diameter cutter. Make sure the cutter cuts all the way through the dough. Transfer the cookies to a baking sheet, making sure the edges just touch. Try to cut out as little scraps as possible. Gather the dough scraps, reroll the dough, and cut out the cookies. (The cookies made from the scraps won't be as light in color as the ones made from the first layer, but that's life.)
  4. Bake in the oven for 15-20 minutes until the top is lightly golden brown and the cookies have risen sufficiently.
