French toast

Ingredients:

  • 1 cup low-fat cream (10-12%)
  • 3 large eggs
  • 2 tbsp. honey, heated in the microwave for 20 seconds
  • 1/4 teaspoon salt
  • 8 slices (1.5 cm thick) rustic bread, buns or challah, day-old or stale
  • 4 tbsp (60 g) butter

Preparation:

  1. In a medium bowl, combine the cream, eggs, honey, and salt. You can do this the day before. Before cooking, pour this sweet batter into a wide bowl.
  2. Preheat oven to 190°C (375°F). Dip the bread in the batter, let it soak for 30 seconds on each side, and place it on a wire rack set over a baking sheet. Let it rest for 1-2 minutes.
  3. Melt 1 tablespoon (15 g) butter in a 25 cm (10 in) nonstick skillet over medium-low heat. Place 2 slices of bread in the skillet and toast until golden brown, about 2-3 minutes per side. Remove from the skillet and place on a wire rack in the oven for 5 minutes. Repeat with all the bread slices. Serve immediately with maple syrup, whipped cream, or fruit.
