Simple Chicken Cordon Bleu with Cheese and Ham topcook.tomathouse.com
Ingredients:
- 3 tbsp. grainy mustard
- 2 tbsp. l. mascarpone cheese
- 2 tbsp. l. olive oil
- 4 chicken breast fillets weighing 140 g each.
- Coarse salt
- 4 large thin slices Emmentaler or Swiss cheese (about 100 g)
- 8 thin slices of ham (about 100 g)
Preparation:
- In a small bowl, combine mustard and mascarpone. Set aside.
- Preheat oven to grill mode.
- Heat a large oven-safe skillet over medium-high heat. Add oil and continue heating for 1 minute. Sprinkle the chicken breasts evenly with 1 teaspoon of salt.
- Place the chicken breasts in the pan and cook until golden brown, about 4 minutes. Turn the chicken over and continue cooking until fully cooked through, about 2 more minutes. Remove from heat.
- Place half a slice of cheese on each chicken breast. Place 2 slices of ham on top of the cheese on each breast.
- Spread the mustard sauce evenly over the ham and top with the remaining cheese slices. Broil in the oven until the cheese is melted, about 2 minutes.
