Sweet and spicy hot cheese sandwiches

Ingredients:

  • 2 tsp rapeseed oil (canola)
  • 1 large red onion, finely diced
  • 80 g thin slices of cheddar (20 g each)
  • 8 slices of whole grain bread
  • 80 g thin slices of Pepper Jack cheese (20 g each)
  • 1 large or 2 medium tomatoes, sliced ​​into rounds

Preparation:

  1. Heat oil in a nonstick skillet over medium-high heat. Reduce heat to medium. Add the onion and cook, stirring, until the edges are golden brown, about 10-12 minutes. Season with salt and pepper to taste.
  2. Place 20g of cheddar cheese on 1 slice of bread. Spread 1 tbsp of caramelized onions on top of the cheese and top with 20g of pepper jack cheese. Top with 1 large or 2 medium tomato slices and the second slice of bread. Repeat with the other three sandwiches.
  3. Spray a nonstick skillet with cooking spray and heat. Place the sandwich on the skillet and press it down with a heavy skillet or plate.
  4. Reduce heat to medium-low and cook until the bottom is dark brown and the cheese is partially melted, about 5-6 minutes. Flip the sandwich over and cook the other side for another 4-5 minutes. Cut in half and serve hot.
