Ingredients:
- 450 g ground beef (no more than 7% fat)
- 1 cup diced sweet pepper (red, green, yellow, or orange)
- 0.5 cup chopped onion
- 1 can (220 g) of tomato sauce
- 0.5 cups of water
- 0.5 cup dark or golden raisins
- 2 tsp ground ancho pepper
- 1 teaspoon dried oregano leaves
- 4 whole grain hamburger buns, cut in half
- Fillings: sliced mango, sliced jalapeno, sliced tomato, chopped fresh cilantro, sliced green onions, grated cheddar
Preparation:
- Heat a large nonstick skillet over medium heat. Add the ground beef, bell pepper, and onion; cook for 8-10 minutes, breaking up any clumps of ground beef into 2-cm pieces and stirring occasionally. Drain off any fat.
- Add tomato sauce, water, raisins, ancho chili, and oregano; bring to a boil. Reduce heat; simmer, uncovered, for 15–18 minutes, or until the sauce thickens slightly, stirring occasionally.
- Spread the meat mixture evenly over the bottom half of each bun. Add any desired toppings and close the sandwiches.
Note
Cooking times are based on fresh or well-defrosted ground beef. The internal temperature of the meat should be at least 160°F (70°C); don't rely solely on color.
