Ingredients:
Applesauce
- 6 McIntosh or Granny Smith apples, peeled, cored and cut into 2.5cm pieces.
- 1 teaspoon lemon zest
- 1 tbsp lemon juice
- 1 tbsp apple cider
- 0.5 tsp Chinese Five Spice Powder
- 1 tbsp. sugar
Latkes
- 450 gr. peeled sweet potato
- 200 g peeled parsnips
- 1/4 cup premium flour
- 2 large eggs
- 1/4 cup vegetable oil + more if needed
For serving
- Sour cream
- 1/4 cup green onions, thinly sliced on the bias
Preparation:
- Applesauce:
Combine the apples, lemon zest, lemon juice, apple cider, five-spice powder, and sugar in a large saucepan over medium heat; stir. Cook until the apples begin to soften but are still in large chunks, 10 to 15 minutes. Remove from heat and let cool.
- Latkes:
Grate the sweet potato and parsnips coarsely and place in a large bowl. Season with salt and mix. Add the flour and mix until evenly distributed. Add the eggs and mix well. Heat 2 tablespoons of oil in a large skillet over medium heat.
- Form the potato mixture into 8 cm (3 in) latkes, about 1 cm (0.4 in) thick. Place in the hot oil in a single layer and fry until golden brown and cooked through, about 4 minutes per side.
- Transfer to a paper towel-lined plate and season with salt. Continue frying the latkes, adding more fat as needed. Serve the latkes with applesauce, sour cream, and green onions.
