Salad with feta cheese and grilled shrimp

Ingredients:

  • 450 g large peeled shrimp
  • 1/3 cup extra-virgin olive oil, plus more for the shrimp
  • Coarse salt and freshly ground pepper
  • 8 cups (about 225 g) young arugula shoots
  • 1 cup sliced ​​cucumber
  • 1/2 cup pitted Kalamata olives
  • 1/4 cup thinly sliced ​​red onion
  • 2 tablespoons fresh lemon juice
  • 230g feta cheese (crumbly), for serving

Preparation:

  1. Preheat the grill to medium-high heat. Brush the shrimp with a little oil, then season with salt and pepper. Grill until cooked through, 2-3 minutes per side.
  2. In a bowl, combine shrimp, arugula, cucumbers, olives and onion.
  3. Combine lemon juice, 1/3 cup olive oil, salt, and pepper. Pour the dressing over the salad and toss well. Sprinkle with feta cheese.
