Fried Rice Casserole with Chicken

Ingredients:

    Eggs

  • Cooking spray
  • 1/2 cup canned bean sprouts, drained
  • 4 large eggs
  • 2 cloves garlic, grated

    Rice

  • 2 x 280g packages of microwave-safe rice, such as Veetee
  • 1 can (230 g) of canned green peas and beans, drained
  • 1/4 cup soy sauce
  • Half a grilled chicken (cut straight down the middle), shred the meat, discard the bones and skin

    Topping

  • 1/4 cup crumbled deep-fried onion
  • 2 green onions, finely chopped
  • Sriracha sauce, to taste

Preparation:

  1. Preheat oven to 375°F (190°C). Spray the bottom and sides of a 20cm square baking dish with cooking spray.
  2. In a medium bowl, combine bean sprouts, eggs, and garlic.
  3. In a large bowl, combine rice, peas and carrots, soy sauce and chicken.
  4. Add the egg mixture and stir to coat. Carefully pour into the prepared pan. Cover with foil. Bake, removing the foil after about 10 minutes, until the eggs are set and the casserole is golden brown, 20-25 minutes.
  5. Topping:

    Serve topped with fried onions, green onions and a drizzle of Sriracha sauce.
