Fried bacon in apple thyme glaze

Ingredients:

  • 1/4 cup apple jam
  • 2 tablespoons chopped fresh thyme
  • 1 tbsp. cinnamon sugar
  • 0.5 tsp liquid smoke
  • 1 Granny Smith apple, peeled and finely diced
  • 12-16 strips of bacon

Preparation:

  1. In a large bowl, combine the jam, thyme, cinnamon sugar, liquid smoke, apples, a tiny pinch of salt, and a few turns of a coarse black peppercorn grinder. Set aside.
  2. Line a baking sheet with nonstick foil and lay the bacon strips on top. Preheat the oven to 200°C (400°F) and place the bacon in the oven while it preheats. Bake until most of the fat has rendered, about 20 minutes.
  3. Remove the baking sheet from the oven and pat the bacon dry with paper towels, removing as much excess fat as possible.
  4. Place a rack on the baking sheet and arrange the bacon on top. Brush the bacon with the glaze. Bake until the apple slices are golden brown and the bacon is crispy, another 20-30 minutes. Let cool for a few minutes before serving.
