Filipino-Style Grilled Chicken Wings

Ingredients:

  • 1.5 tbsp. rice vinegar
  • 1 and 1/4 cups soy sauce
  • 1.5 tbsp black peppercorns
  • 1.5 tsp smoked paprika
  • 1.5 tsp onion powder
  • 7 bay leaves, broken in half
  • 1 head of garlic, minced (about 3 tbsp)
  • 24 chicken wings, halved (tips removed)
  • Leaves from seven sprigs of fresh coriander (about 2 tablespoons)

Preparation:

  1. In a zip-lock bag, combine vinegar, soy sauce, peppercorns, paprika, onion powder, bay leaf, and garlic.
  2. Place the wings in the bag, then squeeze out all the air and seal. Turn the bag over to completely coat the chicken with the marinade, then refrigerate for at least 4 hours or overnight (turn the bag at least once during this time).
  3. Preheat grill to 350°F (175°C).
  4. Remove the wings from the marinade (discard the marinade). Grill the wings, covered, for about 10 minutes. Flip the wings, close the lid, and continue grilling until cooked through or until the internal temperature reaches 165°F (74°C), another 10–20 minutes.
  5. Let the wings rest for a few minutes. Season with salt, pepper, and cilantro leaves.
