Grilled chicken wings with yogurt dipping sauce

Ingredients:

    Wings

  • 3 chicken wings, cut in half (tips removed)

    Frying sauce

  • Canola oil to grease the pan
  • 1 tbsp. grated ginger
  • 2 cloves of garlic, grated
  • 1 cup ketchup
  • 1–2 tablespoons maple syrup
  • 2 tbsp sambal
  • 2 tablespoons of water
  • 2 tbsp whole cumin seeds, toasted and crushed
  • Zest and juice of 2 limes

    Dip sauce

  • 1 cup plain Greek yogurt
  • 1/4 cup chopped cilantro
  • 1 tbsp garam masala
  • 1 tbsp. grated ginger
  • Zest and juice of 1 lime
  • 2 cloves of garlic, grated

Preparation:

  1. Preheat oven to 120°C.
  2. Wings:

    Blanch the wings in salted boiling water for 8 minutes, then roast for 4 minutes. Place the wings on a paper towel-lined rack and pat dry.
  3. Frying sauce:

    Grease a frying pan with oil and heat over medium heat. Fry the ginger and garlic with a pinch of salt. Add the ketchup, maple syrup, sambal, water, and cumin and simmer for a few minutes. Add the lime zest and juice.
  4. Place the wings on a grill pan over medium heat and brush with grilling sauce. Cook until lightly browned, 3–5 minutes per side.
  5. Dip sauce:

    In a bowl, combine yogurt, cilantro, garam masala, ginger, lime zest and juice, garlic, and a pinch of salt. Serve the wings with the dipping sauce.
