Grilled chicken wings with yogurt dipping sauce topcook.tomathouse.com
Ingredients:
Wings
- 3 chicken wings, cut in half (tips removed)
Frying sauce
- Canola oil to grease the pan
- 1 tbsp. grated ginger
- 2 cloves of garlic, grated
- 1 cup ketchup
- 1–2 tablespoons maple syrup
- 2 tbsp sambal
- 2 tablespoons of water
- 2 tbsp whole cumin seeds, toasted and crushed
- Zest and juice of 2 limes
Dip sauce
- 1 cup plain Greek yogurt
- 1/4 cup chopped cilantro
- 1 tbsp garam masala
- 1 tbsp. grated ginger
- Zest and juice of 1 lime
- 2 cloves of garlic, grated
Preparation:
- Preheat oven to 120°C.
- Wings:
Blanch the wings in salted boiling water for 8 minutes, then roast for 4 minutes. Place the wings on a paper towel-lined rack and pat dry.
- Frying sauce:
Grease a frying pan with oil and heat over medium heat. Fry the ginger and garlic with a pinch of salt. Add the ketchup, maple syrup, sambal, water, and cumin and simmer for a few minutes. Add the lime zest and juice.
- Place the wings on a grill pan over medium heat and brush with grilling sauce. Cook until lightly browned, 3–5 minutes per side.
- Dip sauce:
In a bowl, combine yogurt, cilantro, garam masala, ginger, lime zest and juice, garlic, and a pinch of salt. Serve the wings with the dipping sauce.
