Ingredients:
- 0.5 cup olive oil or salted butter
- 2 cloves garlic, crushed
- Zest and juice of 1 lemon
- 4 tbsp fresh thyme leaves, chopped
- 4 cups fresh green peas
- 220-350 g of shaved Pecorino Romano cheese
Preparation:
- Add olive oil (or butter), garlic, and lemon zest to a skillet. Cook over medium-low heat, stirring occasionally until fragrant but not browned, about 5 minutes.
- Add lemon juice, thyme, a pinch of salt, and plenty of black pepper. Stir and cook until the thyme darkens, about 5 more minutes.
- Add the peas and stir until heated through, about 4 minutes. Transfer to a serving dish and sprinkle with shaved cheese.
